Fresh Summer Potato Salad
This fresh summer potato salad is a simple, creamy side dish made with tender potatoes, fresh dill, green onions, celery, Dijon mustard and lemon juice. It is easy to make ahead and even better after it has had time to chill.
What you’ll need
2 lbs potatoes, chopped
1/2 cup mayonnaise
1 tbsp Dijon mustard
1/2 cup celery, chopped
2–3 tbsp fresh dill, chopped
3 green onions, sliced
1 tbsp lemon juice
Salt and pepper, to taste
How to make it
Place the chopped potatoes in a pot of salted water. Bring to a boil and cook until fork-tender, about 12 to 15 minutes.
Drain the potatoes and let them cool until they are no longer steaming.
In a large bowl, mix the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
Add the cooled potatoes, celery, fresh dill, and green onions.
Gently mix until everything is coated, being careful not to break up the potatoes too much.
Chill for at least 30 minutes before serving.
