Vibrant Beet Sauce

This vibrant beet sauce is simple, delicious and almost too pretty to tuck away in the fridge. Made with cooked beets, silken tofu, lemon, garlic and nutritional yeast, it has a smooth, savoury flavour and a colour that brings the whole table to life. Use it as a pasta sauce, spoon it over a bowl of baked beans, or serve it as a dipping sauce with chopped fresh vegetables.

What you’ll need

2 large medium sized beets, cooked & skin removed
1 pack silken tofu
1/2 lemon, juiced
1/2 cup nutritional yeast
1/4 cup water or veggie broth
1 tablespoon olive oil
4 cloves garlic
1/2 teaspoon salt

How to make it

Cook your beets by boiling them or roasting them.
Once cooked and cooled, cut them into smaller pieces and add to a blender with all other ingredients.
Blend until smooth, then pour & store in a container for up to 4 days.
Reheat your serving on the stove top & pour it over cooked pasta noodles, or over a bowl of cooked beans.
